A citrus zester is a kitchen tool that is used to cut tiny pith-free strips of lemon/orange/lime peel. The citrus peel is known for its concentrated oil that is filled with flavor,  which is great for flavoring any dish, sauces or dressing.  Zest adds a huge amount of flavor to your culinary creation or cocktail.   

The key to a good zest is to only grate the colorful peel and avoid the white bitter pith that is underneath the peel.
